Colourful Beetroot salad with mixed seaweeds

This is a fantastically juicy and colourful salad and definitely my favourite. The purples, orange, blacks and greens mixed with the little nuts and seeds make it a treat for the eyes as well as the tummy. The cider vinegar brings a healthy tang, great for a winter vitamin hit or a refreshing summer salad. Great in a warm Pita bread with Humus and avocado or straight up as meal in itself.

1 Large fresh beetroot grated
2 large carrots grated
¼ onion diced
1-2 tbsp mixed dry seaweed (Nori, Sea greens, Dulse, flaked Kombu)
1/3 cup finely chopped purple cabbage
1tbsp mixed nuts soaked overnight (preferably soaked overnight)
1tsp seeds (preferably soaked overnight)
3 tbsp cider vinegar
2 tbsp oil (walnut, olive or hemp)
1tsp mustard
1 clove chopped garlic

Combine vinegar, mustard, garlic and oil. Mix all ingredients together in a large bowl and add more vinegar/ oil to taste. If left, the dry seaweed will absorb some of the juice adding to the flavour so you may need to add a few tbsps water to keep it juicy!
